Yellow birch syrup scallops

Yellow birch syrup

Lime juice

Instructions:
- Cook in butter for about 30 seconds.
- Add birch syrup and cook until ready. Don't over cook.
- Place the scallops in a pre-heated dish and add the lime juice just before serving.
Crab cakes

Crab meat |
| 250 ml (1 cup) |
Crumbled bread |

Egg |
| 65 ml (1/4 cup) |
Mayonnaise |
| 1/2 teaspoon |
Salt |
| 1/4 teaspoon |
Pepper |
| 5 ml (1 teaspoon) |
Escuminac birch syrup |
| 1 teaspoon |
Dry mustard |
| For frying |
Butter |
Instructions:
- Remove all cartilage from crabmeat.
- In a bowl, combine bread crumbs, mayonnaise and seasonings.
- Add brabmeat and mix it slowly. If ti's too dry, add more mayonnaise.
- Form 6 cupcakes.
- Fry the cakes in a skillet with just enough fat to prevent the cakes from sticking.
- Bake until you obtain a nice brown color.
