Yellow birch syrup scallops

 

 

Ingredients:

 

3-4 Large scallops
A hint of Butter
2 tablespoons
Yellow birch syrup
  Lime juice

 

Instructions:


 

  1. Cook in butter for about 30 seconds.
  2. Add birch syrup and cook until ready. Don't over cook.
  3. Place the scallops in a pre-heated dish and add the lime juice just before serving.

 

 

 

 


 

 

 

Crab cakes

6 portions

 

 

Ingredients  
1 pound Crab meat
250 ml (1 cup) Crumbled bread
1 Egg
65 ml (1/4 cup) Mayonnaise
1/2 teaspoon Salt
1/4 teaspoon Pepper
5 ml (1 teaspoon) Escuminac birch syrup
1 teaspoon Dry mustard
For frying Butter

 

 

Instructions:

 

 

  1. Remove all cartilage from crabmeat.
  2. In a bowl, combine bread crumbs, mayonnaise and seasonings.
  3. Add brabmeat and mix it slowly. If ti's too dry, add more mayonnaise.
  4. Form 6 cupcakes.
  5. Fry the cakes in a skillet with just enough fat to prevent the cakes from sticking.
  6. Bake until you obtain a nice brown color.
