Rare and searched for, vigilance is needed. In grocery stores, take good care of asking for yellow birch syrup so it's not confused with white birch syrup.

 

The confusion between white birch and yellow birch syrup probably comes from the name given to the trees. Indeed, both are simply called birch. The fact is that both trees are quite different. The yellow birch is a tall tree principally found in mature forests while white birch grows in forests in transition.  The bark of the white birch is white while the yellow birch's bark is golden and, as years go by, curls and darkens.

 

As of 1993, yellow birch is, like the snowy owl and Quebec's blue flag, a national emblem.

 

We also give yellow birch multiple properties and virtues due to its beneficial components: vitamins, minerals, amino-acids, proteins. In Asia, and in a few scandinavian countries, yellow birch syrup has health related properties. However, no known research confirms that. That is why the necessary steps have been takes with the INAF, l'Institut des Nutraceutiques et des Aliments Fonctionnels to have scientific researches made to uncover the properties of the yellow birch.
