Rack of Lamb with birch syrup and fresh ginger

INGREDIENTS
Main course for 4

- 3 racks of lamb
- 15ml of butter
- 15ml vegetable oil
- Salt and Pepper
- 15ml of Escuminac birch syrup
- 10ml of fresh ginger

 

METHOD

/01. Heat the oven to 180°C (350°F).

/02. Prepare the racks of lamb so that the ribs are clean and exposed.

 
/03. Heat the butter and oil in a pan and brown the lamb.


/04. Season and cook for 1 - 2 minutes. 


/05. Remove from the pan and brush with birch syrup. 


/06. Next scatter a teaspoon of freshly chopped fresh ginger on the lamb. 


/07. Place the lamb in an oven dish and cook for 20 minutes for a pink meat.  


/08. To serve, separate the racks into chops and present on a nest of fresh vegetables and a sauce made with the cooking liquids.
